The operation of the stainless steel cryoextraction wine tanks are based on the extraction technique and low temperatures. By breaking the grapes, the must is liquid rich in sugars, poor in aromas, and monotonous in taste. When applying this technique, it is necessary to cool the grape mass before the start of the alcoholic fermentation at low temperatures, which is done with the high-performance cooling jackets that these tanks have. With the effect of this technique on wines, we achieve an increase in aromas and fruit flavors in the mist of white grapes, an increase in the intensity and shade of the color of the wines, a decrease in the total acidity of the mist and an increase in pH, an increase in nitrogenous compounds and mouth aromas. The tanks have a conical closed roof and a conical bottom with an intermediate sloping bottom made from perforated sheet metal which is removable. Their capacities are from 2.5m3 up to 10.0m and their dimensions are chosen according to the space on which they are intended.
The construction material of these tanks is stainless steel AISI 304 / 316 with internal finish BA (Mirror) and external Fioretto, with certificates of chemical analysis from the steel mill.
The weldings are done with the Argon Tig method in a protective atmosphere of high-purity inert gas.
